Kay's Diary - Holiday Magic

The best part of my childhood Christmases was my Dad’s happiness and engagement.  He wore a bright red vest with brown leather buttons that my mom made for him. He listened to Christmas brass music and sang along… with the percussion. ;)  The rest of the year, he was pretty withdrawn and quiet, so this transformation was magical. 

Today, the best part of Christmas continues to be making magic for my family. Gifts that surprise. Cards with limericks that make them laugh. Matching Christmas PJ’s for all of us, including the dogs.  

This year, we’re all going to be together in warm weather for a week. We’ll do the, ahem, traditional holiday zip-lining and snorkeling.  All I care about is having a crowded table with the magic of love, laughter and true heart connections.

The magic touch is also part of our muffins.  People ask how we got ½ cup of veggies into each pack of our soft-baked, delicious muffins. The magic is in the veggies and the recipes.  The real veggies we bake into the muffin batter are air-dried. That means the water has been evaporated away, leaving the fiber and nutrients intact. 

Zucchini has SO much water in it.  After you remove the water, it doesn’t take a large quantity of the air dried real zucchini to get to a serving.


And my recipes are so yummy, the veggie taste disappears.
