Five Easy Way to Eat More Plants!

Overwhelmed by the conflicting info on what is a “healthy” diet? Whether you’re in weight-loss mode or fulfilling your resolution to eat healthier in 2020, the recommendation always includes eating more plants.
Great. But how do I do this?
- I make extra dinner, veggies and meat, both. So I eat leftover dinner for breakfast. Not for everyone, for sure. But my body really likes it.
- I eat a meal-size salad for lunch. Pretty much every day. In addition to the veggies (usually arugula and radicchio), I add rotisserie chicken and sprinkle pomegranate or berries on top. Except when it’s cold and then I...
- Make (or buy) a veggie-filled soup. Butternut squash soup. Chicken tortilla soup with lots of bell peppers and fire-roasted (canned) tomatoes. Beef stew rich with carrots, onions and I use sweet potatoes.
- When I travel, I always pack baggies of nuts and dried fruit. I know this isn’t what we traditionally think of as “plants”... but they are! The dried fruit gives me energy and the roasted/salted pecans (yum) give me good fat and protein.
- I serve my daughter Farm&Oven mini muffins for breakfast, and she gets over a ½ cup of veggies in each serving! She’s well on her way before school gets started
