Emerald Green Salad - a Dinner Party Hit!

I seem to be the designated the salad maker for my circle of friends. I have four really good salads. And I'm a little scared of the 5th dinner party with the same group - what am I going to do then?  I guess I'll take it one dinner party at a time.

At a party, nobody is gonna eat something that doesn't taste good, right? I aim to create something that's colorful, fresh and tastes so good that people eat seconds.

Last night a woman ate 3 helpings of this salad!

Here are the ingredients:

  • 1/3 - 1/2 head of Savoy cabbage
  • 2 bunches of kale (whatever style of kale you like - sometimes I mix them)
  • One jalapeño pepper
  • 4-6 mint leaves (fresh)
  • 1 cup honey roasted peanuts
  • 1/2 cup Citrus infused olive oil (I use O brand blood lime infused olive oil)
  • A little less than 1/4 cup citrus vinaigrette (Try O brand citrus vinaigrette - it's amazing!)
  • Salt and pepper to taste

Instructions

  • Chop the savoy cabbage, kale, pepper and mint
  • Crush the peanuts
  • Combine in a bowl
  • Drizzle with olive oil and vinaigrette
  • Add salt and pepper
  • Toss
  • Adjust seasonings and dressings to taste
  • Top with fresh mint and crushed peanuts
  • Serve!
