So many nutrition bars offer protein. Why don't we?

1. My daughter ate plenty of protein (albeit in chicken nuggets, cheese and milk), but no vegetable crossed her lips. Ever. In fact, when she was a toddler, she associated green food with veggies so she wouldn't even eat green candy. No kidding.
Today she insists she's allergic to veggies. The issue is the same. Only the excuses have gotten more sophisticated!
My focus has been - and still is - to get veggies into her any way I can. And for me, pureeing butternut squash and juicing spinach is unsustainable because of how much time energy is required.
2. When I had the idea for Farm&Oven (while baking pumpkin bread), I did research because I didn't know if I was the only one who struggled with this. I found that Americans eat 40% more of the daily requirement for protein. That's a lot! But we eat 40% less of vegetables we need.
3. 91% of all Americans don't eat enough vegetables according to the CDC report that was published last November. Whoa! That's kinda... everybody. I guess my family is not unique in this regard.
Protein is great - I'm certainly not against it. It simply doesn't seem like the world needs more ways to eat even more protein.
Veggie nutrition is my thing. And I'm devoted to sneaking them into treats, snacks and desserts that I love but feel guilty about eating.

It's almost 11AM, and my stomach is distinctly empty.
It's a weird time to eat, right? None of my choices seems exactly right.
